Following are three favorite recipes of Paltrow that helps in detoxification.

Spinach and Lemon Hummus (Makes About 2 Cups)

This hummus is a powerhouse of nutrition as it contains vitamin C from lemons, vitamins, iron and fiber from spinach, protein from chickpeas and good fat from olive. You can eat it with a spoon or use it as a spread on a sandwich.

  • 1 (14.5-ounce) can chickpeas, drained and rinsed
  • 5 tablespoons extra-virgin olive oil
  • 3 tablespoons tahini
  • 1 cup packed baby spinach leaves, cleaned, dried, and roughly chopped
  • Zest and juice of 1 medium Meyer (or small regular) lemon
  • 1 large clove garlic, minced
  • 1 teaspoon kosher salt

Put 1/4 cup water with all these ingredients in a food processor and make it smooth through blending. You can add salt for taste.

For the Pesto

  • 1/3 cup lightly packed fresh basil leaves, roughly chopped
  • 1/3 cup lightly packed fresh mint leaves, roughly chopped
  • 1/3 cup walnut halves, roughly chopped
  • 1/3 cup extra-virgin olive oil
  • Kosher salt

For the Bowls

  • 1 medium zucchini, cut into 3 long strips
  • 1 teaspoon extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 1 1/2 cups cooked brown rice or quinoa
  • Zest and juice of 1/2 lemon, plus more juice to taste
  • 3/4 cup Sautéed Cavolo Nero (see below), or any simply sautéed greens such as chard or rapini
  • 1/2 large ripe yet firm avocado, diced
  • 3 tablespoons toasted pumpkin seeds
  • Red chili flakes to taste (optional)
  1. In a food processor, add 2 tablespoon water along with walnuts, olive oil and herbs and blend till smooth to make the pesto.
  2. Now heat a grill pan for cooking of zucchini. Combine zucchini with olive oil, pepper and salt. After heat up of the pan, add the zucchini strips and cook for few minutes until it becomes tender.
  3. To put the bowls together, divide the two bowls with brown rice along with lemon juice and 1/4 cup of pesto. Between these two bowls, equally divide the zucchini, toasted pumpkin seeds, avocado and sautéed greens.

Sautéed Cavolo Nero (Serves 4)

This is also a good detox staple which is also full of nutrition.

  • 2 tablespoons olive oil
  • 2 cloves garlic, thinly sliced
  • Pinch red chili flakes
  • 1 bunch cavolo nero (also called dinosaur kale), washed, dried, and chopped into 1-inch pieces
  • Kosher salt
  1. Medium heat the pan and heat the olive oil. Now add red chili flakes and garlic and cook them for just 30 seconds till the garlic gives fragrance.
  2. Now add kale and salt. Mix everything well and stir with wooden spoon. Fried for 3 to 5 minutes until the garlic is lightly roasted and kale starts to wither.
  3. Now reduce the heat after covering with lid and make the kale tender by cooking for 5 minutes.

Coconut Rice With Mango (Serves 2)

You can get a best treat with coconuts and rice while it is also full of nutrition due to sweetened with coconut sugar and with the presence of brown rice.

  • 2/3 cup cooked brown rice
  • 1/2 cup light coconut milk
  • 2 teaspoons coconut sugar
  • Pinch sea salt (depending on how salty your rice is)
  • 1 ripe mango, peeled and thinly sliced
  • Sesame seeds, for garnish, optional

In a small saucepan, combine the salt, sugar, rice and coconut milk and cook them over low heat for 2 minutes and stop cooking after evaporation of most of the liquid and thickening of the mixture. Top it with sesame seeds and mango.
